Spinach omelette

Ingredients

  • 250 gr spinach
  • 4 eggs
  • 30 gr grated parmesan
  • salt q.s.
  • pepper q.s.
  • Masserie di Sant’Eramo extra virgin olive oil q.s.

Preparation

The spinach omelette is one of the most loved omelettes by Italians. Simple to make, it can be served in squares or slices as an appetizer or whole as a second course. Clean the spinaches and steam them for a few minutes. Once ready, drain them, let them cool and then cut them roughly on a cutting board.
In a bowl, beat the eggs with salt, pepper and grated parmesan, and finally add the spinaches. Heat a drizzle of extra virgin olive oil in a nonstick pan and cook the omelette over medium heat. When the top side is cooked, turn the omelette, maybe with the help of a plate or a lid. Continue the cooking on the other side. In a few minutes, your spinach omelette will be ready to serve.
