Pistachio muffins

Ingredients

  • 250 gr flour
  • 120 gr sugar
  • 110 gr milk
  • 90 gr Masserie di Sant’Eramo extra virgin olive oil
  • 50 gr chopped pistachios
  • 2 eggs
  • 15 gr baking powder
  • zest of a lemon

Preparation

Pistachio muffins are a dessert with an intense flavour and colour. The lover of this dried fruit will find them delicious.
Whip the eggs and sugar with the electric whisk until obtaining a white foam. Add the sifted flour, baking powder, milk and oil. Blend to obtain a homogeneous consistency, then pour the chopped pistachios, keeping aside a couple of spoons for the decoration. Pour the dough in a muffin pan or, alternatively, in aluminum cups, filling ⅔. Bake in a preheated oven at 180°C for about 20 minutes. Always do the toothpick test to make sure they are cooked. Remove from the oven and let it cool. Your pistachio muffins are ready to be served.
