Classic ring-cake

Ingredients

  • 300 gr flour
  • 180 gr sugar
  • 100 ml Masserie di Sant’Eramo extra virgin olive oil
  • 50 ml milk
  • 3 eggs
  • zest of a lemon
  • 1 sachet of baking powder

Preparation

The classic ring-cake is very easy to prepare, perfect for breakfast or for a break. Extra virgin olive oil (instead of butter) makes it softer and delicate.

Start by whipping the eggs and sugar with an electric whisk until getting a frothy and whitish mixture. Add the milk at room temperature and continue to beat with the electric whisk, continue with the oil and gradually add the sifted flour and grated lemon zest. Finally, add the baking powder and perfectly blend the mixture. Oil a ring-cake mold of about 22 cm and pour the mixture inside.
Bake in a preheated oven at 180°C for about 40 minutes. Always do the toothpick test to check the cooking, if it comes out dry then it is cooked. Let the ring-cake cool and if you want sprinkle it with icing sugar before serving.
