Ingredients
- 1 aubergine
- 1 red pepper
- 2 zucchinis
- 300gr pasta
- pecorino cheese or caciotta cheese
- cherry tomatoes
- Masserie di Sant’Eramo extra virgin olive oil
- garlic
- salt
- pepper
- parsley
Preparation
In a large frying pan add the aubergine, the pepper and the zucchinis roughly chopped. Add the minced garlic and the cherry tomatoes and let it slowly sweat with extra virgin olive oil until the desired cooking. Flavour with a pinch of salt and pepper. Add pasta to the vegetables pan. Season with the grated pecorino cheese (or caciotta cheese) to mix everything.
