Courgette chips

Ingredients

  • 4 courgettes
  • flour q.s.
  • a pinch of salt
  • Masserie di Sant’Eramo extra virgin olive oil q.s.

Preparation

The courgette chips are thin sheets of crispy and tasty fried courgettes, perfect as an appetizer and aperitif, maybe served in a paper cone. They are very quick to prepare. Wash and dry the courgettes, then cut them into thin round slices. Pass them in the flour and in the meantime heat the olive oil in a large pan. Pour the courgette slices in the hot oil and drain them, as soon as they brown. Put the courgette chips on some sheets of kitchen paper to absorb the excess oil. Let them cool and serve.
