  • 4 aubergines
  • 1 egg
  • stale bread q.s.
  • salt q.s.
  • grated parmesan q.s.
  • breadcrumbs q.s.
  • Masserie di Sant’Eramo extra virgin olive oil q.s.

Preparation

The aubergine balls recipe is an easy and quick recipe, perfect for an aperitif or appetizer.

Peel and cut the aubergines into large chunks. Boil them in a pot. When they are cooked, set them aside to cool. Add the egg, salt, pepper, parmesan and the wet and squeezed stale bread to the aubergine pulp. Stir everything with a spoon.
Shape the dough into balls and pass them first in the egg and then in the breadcrumbs. Fry them in a large pan with plenty of extra virgin olive oil. Finally, place on some sheets of kitchen paper to absorb the excess oil. Let them cool and serve.
