Salmon and avocado tartare

Ingredients

  • 400 gr fresh salmon
  • 2 spring onions
  • 2 lemons
  • 4 spoons of Masserie di Sant’Eramo extra virgin olive oil q.s.
  • chilli pepper q.s.
  • salt q.s.
  • pepper q.s.
  • 1-2 avocados

Preparation

The salmon and avocado tartare is a delicious and elegant appetizer.

Start by cutting the salmon fillet into regular pieces. Clean and peel the spring onions and finely chop. Add the salmon, the spring onions, the juice of one lemon, 2 spoons of oil, chilli, salt and pepper, blend and let it marinate for about 20 minutes in the fridge. Meanwhile, cut the avocado in half, remove the stone and then cut it into cubes. Season it with the juice of the second lemon, the rest of the oil, salt and pepper. To create the classic shape of the tartare, use a circular pastry cutter. Put the avocado at the base, then the salmon and finally garnish with a drizzle of extra virgin olive oil.
