- 4 cod fillets
- 80 gr breadcrumbs
- 100 ml white wine
- grated lemon peel
- some parsley
- 4 sage leaves
- 1 rosemary sprig
- Masserie di Sant’Eramo extra virgin olive oil q.s.
- salt q.s.
- pepper q.s.
Preparation
Cod fillet au gratin is a light and healthy fish second course, easy and quick to make. These are baked fillets with a crispy crust flavoured with herbs.
In a small bowl, add 2 spoons of extra virgin olive oil, the white wine and the fresh pepper. Set it aside. Finely chop the aromatic herbs and mix them with 2 spoons of olive oil, the breadcrumbs and the grated lemon peel. Blend and bread the cod steaks on both sides. Place them in a pan and moisten with the previously prepared emulsion. Bake at 180°C until they brown on the surface. The cod steaks are ready to be served. Add raw extra virgin olive oil and lemon to taste.
